He later got his fill of bigger, creamier West Coast oysters as a rising young chef in San Francisco. Today, the culinary practice has become a top request\u2014and a culinary signature\u2014at Montage Palmetto Bluff. It\u2019s a relaxed, open-air affair, where South Carolina oysters are draped on butter-baked saltines, along with spoonfuls of Beriau\u2019s signature peppery cocktail sauce. \u201cWe keep it as traditional as possible,\u201d he says. His team spreads the oysters atop a big, steel plate set over a roaring firepit for two minutes to allow the mollusks to open before they hit the table. Trey McMillan of Lowcountry Oyster Company grows bivalves in the pristine Ashepoo, Combahee, and Edisto (ACE) Basin, one of the largest undeveloped estuaries on the Atlantic coast. McMillan\u2019s oysters, Beriau says, are \u201cclean and petite, with a deep cup that allows them to develop full-bellied flesh for better eating.\u201d <\/p><\/div>\n\n\n\n<p data-block-type=\"core\">Their size is on account of the way they are farmed. In the wild, oysters adhere together, their shells growing long, flat, and sharp against one another. Locals call them \u201cblades,\u201d and the oyster roast is an efficient way to cook whole clusters of blades. But McMillan farms oysters as individuals, purchasing them from hatcheries as tiny \u201cseeds\u201d and raising them in a nursery until they\u2019re pinkie-nail-sized. Then he moves them to floating cages in the estuary.&nbsp;\u201cWe typically have 5 million to 7 million oysters on the farm at different sizes,\u201d McMillan says. \u201cSome grow faster, some slower, and we want to keep like sizes together, so they grow more consistently.\u201d<\/p>\n<\/div>\n<\/div><\/div><\/div>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-stackable-columns stk-block-columns stk-block stk-fd78d91\" data-block-id=\"fd78d91\"><div class=\"stk-row stk-inner-blocks stk-block-content stk-content-align stk-fd78d91-column\">\n<div class=\"wp-block-stackable-column stk-block-column stk-column stk-block stk-dd5af7f\" data-v=\"4\" data-block-id=\"dd5af7f\"><style>@media screen and (min-width:690px){.stk-dd5af7f {flex:var(--stk-flex-grow, 1) 1 calc(47% - var(--stk-column-gap, 0px) * 1 \/ 2 ) !important;}}<\/style><div class=\"stk-column-wrapper stk-block-column__content stk-container stk-dd5af7f-container stk--no-background stk--no-padding\"><div class=\"stk-block-content stk-inner-blocks stk-dd5af7f-inner-blocks\">\n<div class=\"wp-block-group is-vertical is-layout-flex wp-container-core-group-is-layout-ee154e9e wp-block-group-is-layout-flex\" style=\"margin-top:0;margin-bottom:0;padding-top:0;padding-bottom:0\" data-block-type=\"core\">\n<h2 class=\"wp-block-heading\" data-block-type=\"core\">Sustainable Oyster Farming in the ACE Basin<\/h2>\n\n\n\n<div class=\"wp-block-stackable-text stk-block-text stk-block stk-4bf99de\" data-block-id=\"4bf99de\"><p class=\"stk-block-text__text\">McMillan\u2019s team pulls the Lowcountry oysters from the water half a dozen times over their two-year lifespan, passing them through a tumbling grader that sorts and polishes them, strengthening their shells, so the oysters grow deep cups. It helps that the mollusks are bred not to spawn. \u201cThey stay good and meaty throughout the year,\u201d he says.<\/p><\/div>\n\n\n\n<p data-block-type=\"core\">The ACE Basin, where the oysters are raised, comprises 350,000 acres of protected wetlands with a seven-and-a-half-foot tide that flushes the farm clean two times a day. \u201cThere\u2019s no development around us, no power plants or factories, nothing to compromise the pureness of water,\u201d McMillan says.
